Its also quite easy to make, although its worth taking your time to get the detail just right. Bacon CabbageCover the bacon in cold water in a large pot and bring slowly to the boil. If the bacon is very salty, its best to discard water and repeat the process until the froth is gone.Finally, cover the bacon with hot water, place the lid on the pot and simmer, 20 minutes for every pound of bacon, until almost cooked.Meanwhile, trim the outer cabbage leaves, remove and discard the core and outer leaves, and slice the cabbage into thin shreds across the grain.About 20 minutes before the bacon is cooked, add the cabbage shreds to the pot, stir, cover and continue to boil gently for up to 4 hou rs.Remove the bacon, strain the cabbage and discard the water.Add butter to the cabbage and season with ground pepper (no salt will be necessary).Serve with parsley sauce and potatoes. b.
